Ellerman House Wine Gallery: Champagne Cellar. Sculptor Angus Taylor. After the subtle detailing of the surface of the chalk, Taylor made a mould of the stone and cast it in bronze. This stands proudly in the middle of the cellar and is finished with a silver nitrate patina, the colours being similar to those of the caves underneath Épernay where a natural patina has developed over many centuries as a result of being touched, water erosion and even bursting champagne bottles. In the champagne cellar at Ellerman House, the original slab of chalk stone is used as a facade above the tasting counter, tilting slightly forward just as the cave walls do in Épernay. The copper cladding below the stone is adorned with multiple brass dots referencing the winemaker’s description of an ‘array of dots’ to describe the micro structure of the wine and the bubbles.
